The Fat Fish at Rainbow Beach Bonny Hills began operation in 2010 by business owner Karyn Bartholomaeus, the establishment’s chef, caterer and event administrator. She is a lady who wears many hats, but it is weddings she is most passionate about, gaining immense pleasure from doing all within her power to ensure that everyone attending a reception she produces, thoroughly enjoys the occasion.

 

Karyn moved to the region in 2002 and fell in love with the beauty of Bonny Hills, quickly making friends with many of the members of the Wauchope Bonny Hills Surf Life Saving Club. This culminated in 2003 with Karyn and a few other club members staging the celebrated Barefoot Ball, an annual event that continued for many years.

 

Originating from the country, Karyn always wanted to move to the coast and start her own restaurant but never expected in her wildest dreams to be so fortunate as to operate one so close to the beach. Initially operating a restaurant at Timbertown as a contractor to Port Macquarie Hastings Council, Karyn was able to form close ties with the council, and this helped pave the way for her venture into developing the Fat Fish.

 

At first, the council only wanted someone to manage a ‘kiosk’ at Bonny Hills. However, Karyn’s tender application raised the bar by including a restaurant, and this must have inspired the decision-makers, for not long after, approval was made to begin work on the restaurant.

These days the Fat Fish has become an esteemed part of the local community. Most days you’ll find Karyn cooking there, or catering for a function, or discussing with a bride-to-be the particulars of an approaching wedding reception. As mentioned, weddings are an important part of Karyn’s world, and if you ask her, she’ll tell you that she feels incredibly honoured to be part of someone’s most special day of their lives.

 

“I try to make it as special an occasion as I can”, Karyn stated in a recent interview, “from meet & greets at the Fat Fish on the Friday night, to organising the brides hair and nails, to ensuring that she is kept nourished on the morning of the wedding with breakfast”.

 

“I really want every bride to walk away from the occasion wanting to talk about it for years and years to come, that it ‘was’ the best day of their life, and if I can help make that happen, for me personally, it is better than just about anything else I could do”.
